Baigan ka Bharta

Baigan ka bharta is one of my favorite dishes. It tastes awesome when the proportion of herbs and spices added is adequate. This recipe is bound to get you rave reviews. It definitely converted my baigan hating HD into a baigan ka bharta lover 🙂

Servings – 4 people


4 large brinjals (baigan / aubergine)

2 large onions

2 large tomatoes

6 garlic cloves

2 green chillies

Oil 2 tblsp

1 tblsp zeera

1 pinch hing

Salt to taste

1 tblsp Red chilli powder

1 tblsp haldi

2 tblsp dhaniya powder

Cut off the tip of the brinjals and steam them in a cooker. Drain the water and keep the brinjals aside to cool. Chop the onions, tomatoes, garlic cloves and green chillies. Heat oil in a kadhai and add zeera and hing to it. When the zeera starts to sputter, fry the onions, garlic cloves and green chillies in it. When the onions turn pink, add the tomatoes and fry them stirring continuously. Remove the cover off the brinjals and mash the pulp. Add the brinjal pulp along with haldi, dhaniya powder, red chilli powder and salt to the onion tomato masala and stir properly on high flame. Put the gas on sim and let it simmer on low flame for 5-7 minutes.
