Egg Sandwich

Sandwich is the staple food for people on the go. True, you can buy them everywhere these days, but why not make them fresh at home. Now only will they be cheaper but also healthier and you can adapt them to your own taste. Eggs are soft and so you need something extra to provide the crunch. I have used tomatoes and onions but you can use anything from cucumbers, water cress, spinach or anything else you like.

Servings – 1 sandwich

Ingredients

2 sandwich bread slices

1 egg

1 tbsp mayonnaise

1 Onion

1 Tomato

Salt and Pepper

Butter (optional)

Egg Sandwich

Boil the egg to hard boiled. Remove the shell of the egg. Mash the egg with a fork and mix in mayonnaise along with salt and pepper.

Spread the egg mixture on one egg slice. Slice the onions and tomatoes and layer them on the prepared slice. Sprinkle with salt and pepper. Butter the other bread slice and complete the sandwich. Cut into triangles and serve.
