HD and I were supposed to travel to a wedding but it got cancelled at the last moment (the travel plans of course). So we had 5 days of holidays at hand and nothing to do….no office (yaaaayyy)….just stuck at home cos it was raining disastrously in the city. The previous day only I had emptied the cupboard and the fridge to eliminate any perishables cos we would be gone and now we had nothing else in the house fit to eat…..not even one potato or even half an onion! We ended up having the best 5 days in a long time but what I am going to discuss here is what I made of the remnants in my kitchen.
Perishables in my kitchen
1 milk packet (1/2 litre)
2 lemons
3 tomatoes
5 potatoes
1 small piece of paneer
We were leaving the next day so we would be having only dinner at night. I was heating milk that morning when it curdled. What to do….so I added some lemon juice to it and made cottage cheese out of it and stored it. This is what I did for dinner to dish out a good meal while clearing out my kitchen.
Ingredients
Leftover paneer
3 tomatoes
5 potatoes
2 tblsp oil
1 tblsp zeera
A pinch of hing
2 cloves
A small piece of cinnamon
Salt and red chilli powder
1 tblsp garam masala
Grind the tomatoes with cloves and cinnamon and keep aside. Peel and cut potatoes into ½ inch pieces. Cut paneer into ½ inch pieces. Keep aside. Heat oil in a cooker and add zeera and hing. When zeera starts to splutter, add tomato paste and cook till oil separates from the paste. Add potatoes and paneer along with salt and chilli powder and 3 cups of water. Cook till one whistle and then let it simmer for 10 minutes. Add garam masala and serve with rice/roti.
I served it with rice…..easier to make and takes less effort. The leftover energy helped in packing
